Antimicrobial activity of fermented meat microbiota
Abstract
Fermented meat microbiota produce a variety of bioactive metabolites with antimicrobial properties. This section highlights the role of microorganisms—particularly lactic acid bacteria—in generating compounds such as organic acids and bacteriocins that inhibit foodborne pathogens and contribute to the safety and preservation of fermented meat products.
Why Quorum-Sensing Inhibition Fails
Abstract
While Quorum Sensing (QS) is a primary target for anti-virulence therapy, its inhibition often proves ineffective against established biofilms. This review explores the 'QS-independent' mechanisms—including limited diffusion, metabolic dormancy, and specialized persister cells—that allow mature biofilms to survive even when chemical communication is disrupted.
